Macadello is our first fermentation sparkling wine. Using Macabeu from the old vineyard of Finca Poal, we produce this ancestral wine with 15 months of bottle aging, manually clarified and disgorged in the cold, with fine pleasant bubbles and notes of ripe and refreshing fruit.

Vinification
As with all our wines, the harvest is done manually. The grapes undergo gentle pressing, and the juice is clarified for 24 to 48 hours to separate the purest part. Then, the juice is transferred and fermentation begins at very low temperature (12ºC- 14ºC). Towards the end of fermentation, we bottle the base wine, and after about 15 months of aging on the lees inside the bottle, we perform disgorging, and it is ready for the market. No expedition liqueur or additives are used, from grape juice to sparkling wine.

Tasting notes
Pale yellow colour, with small and slow-releasing bubbles. On the nose, it is clear and fresh, with aromas of stone fruits and light citrus notes. On the palate, it has wide, vibrant, and fresh entry, with a very pleasant texture and volume.
Pairing
It perfectly accompanies appetizers, light fish and seafood dishes and salads and pastas.

We are aware that while making quality wines, the quality of the grapes is more important than the quantity. We are lucky to have vineyards of traditional varieties, such as Macabeu, Parellada, Ull de Llebre or Trepat, which are between 80 and 95 years old.
